Smoked Gouda Potato Soup is a staple in our house every late summer/early fall! It's the perfect transitional soup with cozy warm flavors and fresh summer vegetables! 🍂

Recipe:
3 tbsp of butter
1 onion, chopped
4-5 cups of chopped small potatoes (red or white are best in this recipe)
4 cups of chicken broth (32 ounces)
1 tsp red pepper flakes (Optional)
Salt and pepper as desired
1 cup of half and half
1 heaping tbsp honey
1/2 cup shredded colby jack
1 cup shredded smoked gouda

Start by melting your butter in a large pot. Add your onion and cook until onions are soft. Then add in your chopped potatoes and cover with the chicken broth. Simmer until the potatoes are tender. Turn the heat off, leaving the pot on the warm burner. Add in your red pepper flakes (if using), salt and pepper. Use a potato masher to mash the soup four or five times. About 1/3 to 1/2 of the potatoes should be slightly mashed. This thickens the soup! Next add in the Honey and then the half and half. Next add in the cheeses and stir until they are fully melted into the soup. Using freshly grated cheese makes a creamier soup.

Serve with extra Gouda or bacon bits for topping!

RECIPE BELOW:

1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 cup peanut butter (creamy)
1 large egg
1 & 1/2 teaspoons vanilla
1 & 1/2 cups all purpose flour (or 1 to 1 gluten free! That's what we used and you couldn't tell at all!)
1/2 teaspoon baking soda
10 ounces mini butterfingers

In a large bowl or stand mixer, beat butter and sugars until creamy. Add the peanut butter. Once incorporated, add in the egg and vanilla. Finally add in the flour and baking soda. Mix until just incorporated! Last, mix in the Butterfingers in the mixer under they are your desired size (if you like them smaller, chop before you add them in. We like them in bigger pieces so we pop them in the mixer). Chill dough for 90 minutes!

Scoop the dough onto parchment lined baking sheets, topped with extra Butterfingers if you want! Bake at 350 for 10-13 minutes, until just set! 🍫🍪🍂

The dreamiest cookies for a little pre-Fall treat! 🍁🎃

RECIPE BELOW:
3/4 cup butter, softened

1/2 cup brown sugar, packed

Mix until just incorporated! Take half of your Oreos and crush them finely, mix them in by hand. Chill dough for 90 minutes in the fridge or 30 minutes in the freezer!

Preheat oven to 350. Remove dough from fridge, and scoop onto parchment lined baking sheets! Rough chop the rest of the Oreos and Reese's Cups and place them on top of the dough balls. Bake for 10-13 minutes (until just set).

The perfect brunch for summer weekends!🍓

RECIPE:
1 loaf brioche or sourdough bread (16 ounces), cut into 1-inch cubes
8 ounces cold cream cheese, cut into very small cubes
1/2 cup strawberry jam (approximately- you will dollop so amount can fluctuate)
4 large eggs
2 cups half-and-half
1/4 cup granulated sugar
1 tablespoon pure vanilla extract
1/2 teaspoon salt
Powdered sugar, for serving

Preheat the oven to 350. Toast the bread cubes for about 7 – 8 minutes until JUST toasted but still soft on the inside.

Place about half the cubes in a greased 9 x 13. Top the bread with the cream cheese cubes as evenly spread as you can. Take teaspoons of the jam and dollop them around the bread and cream cheese. Layer the rest of the bread on the top and dollop another layer of the jam all around.

Next in a mixing bowl, mix the 4 eggs, half and half, sugar and salt together until smooth. Pour mixture over the bread. Cover and refrigerate overnight.

The next morning, bake at 350 for 45-50 minutes.

Let it cool slightly (about 10 minutes- it will set up the rest of the way), and then top it with powdered sugar! Can be served with butter, extra jam, syrup (maple or strawberry) or macerated strawberries!

The only summer treat recipe you'll ever need! 🥨🍓🌞

RECIPE:
For the pretzels:
1 cup of pretzels
3 tbsp of butter (melted)
2 tsp of sugar

1/4 cup butter
1 bag of mini marshmallows (10 Oz)
Half bag of Crispy Rice (6 ounces)
Pretzels (from above)
Freeze dried strawberries (as desired)

Mix the melted butter, pretzels and sugar. Place in a single layer on a parchment lined baking sheet. Bake at 400 for 6-8 minutes.

Melt the butter on medium, stirring occasionally until it is a light brown with a nutty aroma. Turn down the heat to low. Add in the marshmallows, mixing until melted. Remove from heat and add in the Crispy Rice, pretzels and strawberries. Put mixture into an 8 x 8 greased pan and let cool! If desired, while they are warm press in a few freeze dried strawberries and pretzel pieces.

The perfect cookie for summer! 🍪🥥

1/2 cup salted butter softened
1/2 cup light brown sugar
1/4 cup sugar
1 large egg
1 teaspoon vanilla
1 ¼ cups flour
1/2 teaspoon baking soda
½ cup sweetened coconut flakes
½ cup white chocolate chips
Kraft Caramel Squares – cut in half

Using a mixer, mix together butter and sugar until smooth. Add in the egg and vanilla. Once fully incorporated, add in the flour and baking soda. With a wooden spoon, fold in the coconut and chocolate chips. Mix until just incorporated. Chill the dough for 30 minutes.

Roll onto a parchment lined baking sheet and place a caramel in the center of the cookie dough. Bake at 350 for 10-11 minutes.

1/3 cup of peanut butter, melted
Crushed Oreos (as desired)

Melt the butter. Add in the marshmallows, mixing until melted. Remove from heat and add in the Crispy Rice. Once incorporated, add in the Oreos and the melted peanut butter. Put mixture into an 8 x 8 greased pan and let cool! If desired you can drizzle a little more melted peanut butter top!

The perfect treat for Derby week! 🥃🏇🌹

For the crust:
1 ½ cups unsalted butter at room temperature
½ cup sugar
2 large eggs
1 teaspoon vanilla
3 cups flour
¼ teaspoon baking powder
pinch of sea salt

For the filling:
1 ½ cups unsalted butter
⅔ cup maple syrup
2 ¼ cups of brown sugar
3 tablespoons heavy cream
1 teaspoon vanilla
2 cups of roughly chopped pecans

For the crust, in a stand mixer beat together the butter and sugar until light and fluffy. Add in the eggs and vanilla until incorporated. Slowly add in the dry ingredients until just combined. Transfer the dough to a parchment lined 9 x 13 baking pan. Press the dough into the pan. Bake at 350 for 15 minutes. Set aside to cool.

While the crust is cooling, prepare the filling. In a sauce pan, add the butter, maple syrup and brown sugar. Bring to a boil and allow it to boil for 3 minutes. Remove from heat and add in the heavy cream, vanilla and chopped pecans. Spread onto the crust evenly and bake for 25-30 minutes at 350. Allow to cool fully before cutting into squares!

Sharing another family recipe and this time it is the absolute best homemade chocolate frosting! It's so easy to make and so versatile to top cookies, cupcakes, cakes and so much more!

Recipe:
6 tbsp softened butter (slightly melted)
1 tsp vanilla
2 tbsp honey
6 tbsp cocoa power
2 cups powdered sugar
2-4 tbsp milk (I used half and half)

Mix together the butter, honey, vanilla and cocoa until thick and fudgy. Add in one cup at a time of powered sugar followed by 1 tbsp of milk alternativing until it's fully combined. If you need to add more milk to thin it out, add up to 4 tbsp gradually!

The perfect Carrot Cake bars with thick, homemade cream cheese frosting that will be on your rotation for Spring desserts year after year! 🥕🐰☕

RECIPE:
2 cups of almond flour
1/3 cup of coconut flour
1 tsp baking powder
1 cup of brown sugar
1 tbsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
2 eggs
1/2 cup of maple syrup
2 tbsp vanilla
2/4 cups of shredded carrots (freshly shredded)
1/2 cups of chopped pecans (optional)

Frosting:
2 packages of softened cream cheese
2 tsp vanilla
2 cups (to taste) of powdered sugar

Add all dry ingredients to a large mixing bowl and mix together. Add in the eggs, syrup and vanilla and mix until well combined (batter will be thick). Stir in the carrots and pecans. Add the batter to a 8 x 8 greased pan (or lined with parchment paper) and bake at 350 for 35-40 minutes, until a toothpick comes out clean.

For the frosting, in a mixer add the cream cheese and vanilla until smooth. Add in 1 cup at a time of the powdered sugar. Add a little more until it is the desired flavor and texture. Frost the cake when it has completely cooled!

Store in the fridge!

If you make one treat for Easter let it be these Triple Peanut Butter Treats! 🐇 Filled with peanut butter, Reese's Pieces Eggs and Reese's Puff Bunnies, they are absolutely delicious!

RECIPE:
1/4 cup butter
1 bag of mini marshmallows (10 Oz)
Reese's Puff Bunnies Cereal (about 4 cups)
1/4 cup of peanut butter, melted
Crushed Reese's Pieces Eggs (as desired)
More Reese's Pieces Eggs to top

Melt the butter. Add in the marshmallows, mixing until melted. Add in the peanut butter and stir on low heat until fully incorporated. Remove from heat and add in the Reese's Puff Bunnies! Once incorporated, add in the crushed Reese's eggs. Put mixture into an 8 x 8 greased pan, top with a few additional eggs and let fully cool!

Gently stir to coat the entire mixture. While the almond bark is still warm top with the crushed Cadbury eggs and the sprinkles! Let cool completely and then break into pieces!

RECIPE:
Pretzels (about 8 oz)
1 cup salted butter
1 cup brown sugar
1 tbsp vanilla extract
Easter Sprinkles (as desired)

Preheat your oven to 350 degrees. In a saucepan, melt the butter and brown sugar together, stirring continuously until it gently boils. Add in the vanilla extract and continue to stir, allowing it to boil for one minute. Spread your pretzels on a baking sheet lined with parchment paper and drizzle the toffee mixture over the pretzels, coating them evenly. Place them in the oven for 10-15 minutes until they are bubbly. Pull them out of the oven, stir them and sprinkle on the sprinkles while they are warm! Let them cool and break them apart!

No Bake nests for Easter! These are truly the perfect three bite treat with a couple Cadbury eggs inside! The full recipe is below!

Recipe:
½ cup of butter
½ cup half and half
1 cup of brown sugar
1 cup of sugar
¼ cup of cocoa powder
2/3 cup peanut butter (can use either creamy or crunchy!)
2 tsp vanilla
2 cups of quick oats

Combine butter, half and half, sugars and cocoa powder in a small saucepan using low heat. Stir the mixture frequently until fully melted and incorporated. Once incorporated, turn the heat up to medium and let the mixture come to a boil. Boil until the mixture reaches 230 degrees. Mine takes about 2-3 minutes, but will vary depending on your stove! Once it reaches 230 degrees, remove from heat and add in the peanut butter and vanilla, stirring until the peanut butter is fully melted into the mixture. Pour over the quick oats and stir! Scoop the mixture into greased mini muffins pans, working quickly. Using the back of a spoon, dig out a little hole in the center to form the shape of a nest. Place two of 3 Cadbury eggs in the center of the cookies while they are still warm, gently pressing them into the oats. Let fully cool before removing from the pan!

Giving our little kitchen corner a little extra coziness mixed with Easter was just what I needed this week! The cookbooksl shelves were just so good to display the cookbooks I'm always reaching for....big shock they are mostly cookie cookbooks. 😂 But they turned out so cute next to my families framed recipes!

I added the mini lamp, my cherished bread box and a little Easter and it's perfect! 🐇
